The Greatest Vegan Cheese Yet

last night i decided to make some vegan cheese. instead of going with a recipe i had previously tried out, i wanted to see if there was a recipe floating out there that could top it. sure enough i did find one. this cheese is so good. it's really thick and the color even looks like it, (the previous ones i've made were always soupy and yellow) i was estatic!

so here is the awesome pizza i made for lunch today that included that delicous cheese (i swear i could eat it straight out of the jar!)

Spinach Olive Cheeze Pizza
Serves 1
Ingredients:
1 Tortilla
1 1/2 tbsp tomato sauce
5 capers minced
5 thin slices of tomato
2 tbsp frozen spinach thawed
1 tbsp corn
2 kalamata olives
5 tbsp cheese sauce
pepper to taste
Directions:
place the tomato sauce on the tortilla as a foundation. then put everything else on in any order you desire. i placed the cheesze last as to seal everything together.
place it in the oven at 375F for 10 minutes.

looks like its getting easier!

I've had plenty of running incidents these past months that have prevented me from running at my full potential. Since then things have not been looking so good in that department. i started running last summer. I did so because i wanted to become more active, i haven't been into sports all my life. In addition, since turning vegan i started paying attention to my health and running is very much good for you. This summer my mission is to get back to the same shape that i was in last summer. Today i did well in my run :)

so for the noms...... lunch i hate a spinach salad with mini heirloom tomatoes and Trader Joe's balsamic vinaigrette.




And after that I had this delicious frittata made with broccoli, carrots, onions, peas, and mushrooms. it was the best one I've made to date! This picture isn't exactly food porn but let me tell you, my omnivore sister said that it was very comparable to the real thing. Thats something.

Tonights Dinner

Not a lazy night tonight, after a good run i was starving and had this idea in my head. its basically grilled eggplant with grilled tomato slices layered in between. it lies on a bed of sauteed kale with celery. around it is baked italian lemon tofu and zucchini chunks.
Kale:
1 bunch of kale washed and torn into bite sized pieces
2 stalks of celery, sliced
1 tsp curry powder
2 cloves garlic, minced
1 tsp soy sauce
1/2 tsp turmeric
water

put the garlic and a little bit of water in a pot. wait 2 minutes till the garlic becomes fragrant. add in the celery and kale. put the lid on and let it steam for 5 minutes. add water if needed to prevent from burning. after that add in the soy sauce, curry powder, and turmeric. give a good stir and let it steam for another 5 minutes. after you think its cooked long enough serve and enjoy!
